The Hidalgo Pedro Ximenez Triana appears very dark in the glas with an iodine intensity. The nose shows notes of prunes and raisins followed by an opulently sweet caramel, raisin and vanilla notes in this richly sweet Sherry. Full-bodied and robust, with a lingering finish.
Warm rye, caraway and buckwheat notes lead the way,followed by Turkish coffee and halva accents. The finish rolls through, with a thick, viscous feel. Drink now. na is made from Pedro Ximenez grapes which are left in the sun to become raisins before pressing. The fermentation is interrupted by the addition of alcohol to 15% leaving a high residual sugar content. The wine is then aged in oak for an average of 6 years in American butts in the traditional Solera System.
